Mediterranean Chicken & Lentil Burger with Lemon, Mint, and Cucumber Yogurt Sauce
This is our second burger recipe of the week and another crowd favorite. Take your favorite Greek take-out meal and make it into a burger. Not only is it super flavorful but it is super healthy. Using a lean meat like chicken takes the calories down. Mixing in a bunch of fresh herbs and dressing it with a yogurt sauce, how can it get any better. I like to serve these on mini pitas instead of burger buns but its your choice. I also serve these burger with a quick salad of cucumbers, tomatoes and feta, Enjoy!
Ingredients:
Burger
1 Can Lentils, Rinsed and slightly mashed
1 Pound Ground Chicken
1 Handful Fresh Oregano, Chopped
1 Handful Basil, Chopped
1 Tsp. Dried Thyme
5-6 Sundried Tomatos, Chopped
1/4 Red Onion, Chopped
Zest of One Lemon
Salt and Pepper
Yogurt Sauce
1/2 Cup Greek Yogurt
Zest of Half a Lemon
Juice of Half a Lemon
Handful Mint, Chopped
1/4 Cup Grated Cucumber
10-12 small pitas or burger buns
Cucumber slices
Directions:
Place all burger ingredients together in a large bowl and mix together,
Form into 5-6 patties and set aside.
Mix all sauce ingredients together in a medium bowl and set aside.
Turn BBQ on to medium heat and cook burgers for 3-4 minutes per side.
Serve on small pitas and dressed with yogurt sauce and sliced cucumbers
