Pina Colada Coconut French Toast with Caramelized Pineapple Jam
This is our third and last Mother's Day Brunch recipe. This recipe is perfect for my mom as Pina Coladas are her very favorite tropical drink! The mix of Pineapple, Coconut and Honey will make you feel as though you are on a tropical vacation. Enjoy and remember to treat your mamma's extra special this Sunday!
Ingredients:
Toast
6-8 Large Eggs
3 Tbsp. Shredded Coconut
1/4 Cop Coconut Milk
1 Tbsp. Honey
8 Slices Bread (whatever kind you prefer, I use whole wheat)
Coconut Oil for frying
Caramelized Pineapple Jam
1 Tbsp. Coconut Oil
2 Cups Pineapple, cut in chunks
2 Tbsp. Dark Rum
1 Tbsp. Brown Sugar
Directions:
First we are going to make the Pineapple Jam
Heat the coconut oil at medium heat. Once hot add the pineapple and cook for 3-4 minutes.
Add the rum and brown sugar and cook, stirring for 5-6 mot minutes or till the pineapple breaks down.
Set aside
Next we are going to make the Toast
Whisk together eggs, shredded coconut, coconut milk and honey and set aside.
Heat coconut oil at medium heat. Once hot dip bread in egg mixture and transfer to hot pan. Cook first side for 2-3 minutes then flip over and cook the other side for 1-2 minutes or till the egg has browned
Repeat with all remaining slices of bread
Serve toast topped with pineapple Jam and sprinkled with extra shredded coconut.
