Orange & Lemon Thyme Roasted Salmon
Blood Oranges are one of my favorite types of citrus, I love their colour and their sweet flavor. I like to serve them in salads and enjoy them in cocktails, but my favorite way to serve them is with fish. This roasted salmon recipe is a wonderful light meal for a spring lunch or an al-fresco dinner served alongside a mixed salad and quinoa. It also looks pretty fancy so it can defiantly be served to guests. Enjoy it with a chilled glass of Pinot Grigio and you are set!
Ingredients
2 Tbsp. local organic honey
2 Tbsp. olive oil
1 Tsp. turmeric
1/2 Tsp. cayenne pepper
Handful lemon thyme
4-5 Blood oranges, sliced
Salt & Pepper to taste
Cilantro, to serve
Mint, to serve
Directions:
Set oven to roast at 425
Whisk together honey, olive oil, turmeric and cayenne pepper.
Cover a roasting pan with parchment paper, arrange rows of oranges and place salmon on top in a single row.
Season salmon with salt & pepper and brush honey mixture over salmon. Place thyme stems over salmon and cover with orange slices.
Roast for 20-25 minutes, or till salmon is cooked throughout.
Serve topped with cilantro and/or mint leaves.
