Orange & Lemon Thyme Roasted Salmon

Blood Oranges are one of my favorite types of citrus, I love their colour and their sweet flavor. I like to serve them in salads and enjoy them in cocktails, but my favorite way to serve them is with fish. This roasted salmon recipe is a wonderful light meal for a spring lunch or an al-fresco dinner served alongside a mixed salad and quinoa. It also looks pretty fancy so it can defiantly be served to guests. Enjoy it with a chilled glass of Pinot Grigio and you are set!

Ingredients

  • 2 Tbsp. local organic honey

  • 2 Tbsp. olive oil

  • 1 Tsp. turmeric

  • 1/2 Tsp. cayenne pepper

  • Handful lemon thyme

  • 4-5 Blood oranges, sliced

  • Salt & Pepper to taste

  • Cilantro, to serve

  • Mint, to serve

Directions:

  1. Set oven to roast at 425

  2. Whisk together honey, olive oil, turmeric and cayenne pepper.

  3. Cover a roasting pan with parchment paper, arrange rows of oranges and place salmon on top in a single row.

  4. Season salmon with salt & pepper and brush honey mixture over salmon. Place thyme stems over salmon and cover with orange slices.

  5. Roast for 20-25 minutes, or till salmon is cooked throughout.

  6. Serve topped with cilantro and/or mint leaves.

Time: 30 minutes
