BOT (Bacon, Onion and Tomato) Breakfast Pizza with Easy Guacamole

Move over BLT theres a new Sandwich (or Pizza) in town. This is my twist on a classic BLT sandwich but in a Pizza, because lets be honest everyone would much rather have a pizza over a sandwich anyway!. The BOT pizza is a mix of bacon, onion and tomato with classic breakfast fixin's like eggs and cheese. This pizza is on steady rotation at my cottage during the spring/summer months. It's super easy to make and satisfies everyone around the table. Serve with multiple cups of coffee and my easy guacamole, Enjoy!
Ingredients:
Half store bought pizza dough
1 1/2 cup light ricotta cheese
8-10 bacon slices
3 Large Free-run eggs
3-4 Green onions, sliced in 2" lengths
Salt & pepper to taste
Tomato Salad
1 cup cherry tomatos, halved
Handful fresh basil, chopped
Handful fresh oregano, chopped
1 Tsp. lemon rind, grated
3 Tbsp, olive oil
Salt & pepper to taste
Easy Guacamole
1 Large ripe avacado
1 Tbsp. Lime juice
2 Tbsp. Greek yogurt or sour cream (optional but makes the guac more smooth!)
1/2 Tsp. Cayenne pepper (optional)
Salt & Pepper to taste
Directions:
Preheat oven to 400 degrees
Toss all salad ingredients together and set aside.
Roll out pizza dough and place on pizza stone
Spread out ricotta in a thin layer. Place bacon slices in a cicular shape to create a "wall" for the eggs. Crack an egg in the center of each "wall", sprinkle with green onion slices and top with tomato salad. season with salt and pepper.
Bake for 20-25 minutes or till pizza is browned and egg is cooked. If egg is still not cooked set oven to broil and cook for 2-3 minutes being careful not to burn the top (leave the oven light on during this time)
While pizza is cooking mix all guacamole ingredients together and set aside.
Slice pizza in equal portions and serve alongside easy guacamole.
Time: 40 minutes (including baking time)
Serves: 2 people
