Cipolte Spiced Lentil Tacos with Mango, Pineapple Slaw
Hello my people, how have you not told me that meatless Monday is an ACTUAL thing, and here I'm almost every Monday posting delicious meat recipes. Well here to make up for that is an AMAZING meatless recipe that takes 30 minutes (perfect for Monday nights ;) ) My husband and I are in no way, shape or form vegetarians but we can all use a day or two filled with yummy veggies, without having to give up taste. Enjoy!
Ingredients
Lentil "Meat"
1 Tbsp. Coconut oil
1/2 Yellow onion, diced
2 cloves garlic, minced
1 Can lentils, drained and rinsed
1 Tbsp. Cipolte chili, ground
1 Tsp. Chili powder
1/2 Tsp. Cayenne Pepper
1/2 Tsp. Cumin
Salt & Pepper to taste
8 Small whole wheat flour tortillas
Pineapple Slaw
1 Cup Pineapple, cut into 1/2" cubes
1 Cup Mango, cut into 1/2" cubes
1/4 red onion diced
Handful cilantro, chopped
Handful mint, chopped
1 Jalipano pepper, sliced
Juice of 1/2 lime
Garnishes
Lime wedges
Cilantro, chopped
Feta, crumbled
Jalipano peppers, sliced
Avacado slices
Greek yogurt
Directions:
Mix all slaw ingredients together and set aside.
Heat coconut oil in pan at medium heat and cook onion till soft, 3-4 minutes. Add garlic and cook for another 1-2 minutes.
Add lentils and all spices and cook, stirring often, for 5 minutes or till lentils are slightly browned.
Serve lentil "meat" in flour tortillas topped with pineapple slaw, lime wedges, extra cilantro, feta cheese and jalipano slices.
Time: 20 minutes
Serves: 2 for dinner
