Spring Green Pizza

It finally feels like Spring in my parts. I can't say that this is my favourte season, sorry spring but autumn has you beat, but I definatly LOVE feeling the warmer temps, having longer nights and seeing green grass after the long Canadian winter. This pizza looks just like that, GREEN. The perfect meal for Sunday brunch or a Saturday night appetizer. Enjoy!

Ingredients:

Walnut and Arugla Pesto

  • 2 handfuls arugla

  • 1 handful chopped walnuts

  • 2 Tbsp Olive Oil

  • 2 cloves garlic, minced

  • 3 Tbsp. Freshly grated parmasean cheese

Pizza

  • Half a store bought pizza dough

  • 6 Asperagus spears, shaved

  • 2 Green onions, sliced in 2" lengths

  • 1/4 cup crumbled feta + extra for serving

  • 1/4 cup shredded mozzorella cheese

  • Salt & Pepper to taste

Directions:

  1. Preheat oven to 400 Degrees

  2. Place all pesto ingredients in blender and pulse till all comes together and a paste forms. Season with salt & pepper and set aside.

  3. Roll out pizza dough to desired shape and thickness. Place on pizza stone, season with salt & pepper and drizzle with olive oil.

  4. Bake the pizza for 15 minutes then pull out of oven to dress.

  5. Spread out pesto, lay down shaved asperagus and green onions. sprinkle with crumbled feta and mozzeralla.

  6. Bake pizza for another 5-10 minutes or till crust is browned.

  7. Serve topped with extra feta cheese

Time: 45 minutes

Serves: 2 for a meal and 4 for a appetizer
