Fig Caprese Salad with Honey Dressing


Figs and Fresh Bocconcini were both on sale at the market so naturally I had to buy both without any plans for them. I brought them home and immediately thought "caprese salad". Traditional caprese salad is one of my favourite starters or sides to serve and this one for springtime will quickly become a new favourite, Enjoy!

Ingredients:

  • 12 Fresh Figs, sliced into 4 equal pieces

  • 4 Medium Bocconcinis, sliced into 3 equal pieces

  • Lemon Thyme to serve

  • Salt & Pepper to taste

Dressing:

  • 3 Tbsp. Olive Oil

  • 2 Tbsp. Organic Local Honey

  • 1 Tbsp. Honey Dijon Mustard

  • Balsamic Reduction to serve

Directions:

  1. Wisk all dressing ingredients together and set aside

  2. Assemble fig towers 3 to a plate layering fig slice then bocconcini slice. Drizzle with dressing and season with Salt & Pepper.

  3. Serve drizzled with balsamic reduction and sprinkled with lemon thyme or just plain thyme if you cannot find lemon thyme.
