Blackberry, Fig, Fennel, Prosciutto & Honeyed Goat Cheese Pizza
With Easter weekend coming up I thought I would prepare for you a super simple but delicious spring pizza. With ingredients like blackberries, fig, fennel and honey this will soon become one of your favorite pizzas. Serve as a light lunch or appetizer and enjoy with chilled white wine or your favorite rose, Enjoy!
Ingredients:
Half a store bought pizza dough
Flour for dusting
2 Tbsp. olive oil
1 Bulb fennel, sliced
1 Cup blackberries
5 Figs sliced
6 Slices prosciutto
Handful pine nuts
Lemon thyme for serving
Balsamic reduction for serving
Salt & Pepper to taste
Honeyed goat cheese
1/3 cup goat cheese
2 Tbsp. Organic Local Honey
Directions:
Preheat oven to 375 Degrees
Whip together the honeyed goat cheese and set aside.
Roll out pizza dough in a circular motion till desired thickness and place on pizza stone
Drizzle olive oil over dough and season with salt & pepper.
Bake for 30-35 minutes or till the crust is browning. Take out and sprinkle with fennel, blackberries, figs, and honeyed goat cheese. Place prosciutto and pine nuts on pizza and bake for another 4-5 minutes.
Serve sprinkled with lemon thyme and drizzle with balsamic reduction.
Serves: 2 for main and 4 for an appetizer
