Rosemary, Fig and Caramalized Onion Focaccia
With our renovations complete I'm in full-blown entertaining mode. All I want to do is have friends and family over to enjoy our new space. Over the past 2 months I have dreamed of these times and am SO EXCITED that they are finally here!!! Today I have for you a super easy faccoccia recipe that is the perfect accompiment to your cheese board spread or served inside your bread bowl. Enjoy!
Ingredients:
Onion Mixture
1 Tbsp. Olive Oil
2 yellow onions, thinly sliced
2 Tbsp. brown sugar
2 Tbsp Balsamic Vinegar
1 Tsp. Fennel seeds
Faccoccia
1 Store bought pizza dough
1 cup figs, quartered
Handful rosemary leaves
Sea salt and pepper to taste
Good quality olive oil
Directions:
Heat olive oil at low heat and add onions, stirring for 10-15 minutes or till the onions have softened
and shrunk in size. Add brown sugar, balsamic vinegar and fennel seeds and cook for an additional 5-10 minutes till the onions have a caramel colour. Set aside in small bowl and allow to cool.
Pre-heat oven to 425 Degrees and place parchment over baking sheet
Punch out dough on a lightly floured surface and kneed for 2-3 minutes to allow all air to be pushed out.
Cover work surface completly with flour and form dough into a rough rectangle then cover with onion mixture. Fold the dough onto itself 5-6 times or till the onion mixture has been encorporated throughout the dough adding more flour if needed.
Press the dough onto the baking sheet and let sit for 15-20 minutes for the dough to rise slightly
Using your finger press little indents into dough and insert figs. Drizzle a little more olive oil and sprinkle with rosemary leaves and sea salt.
Bake for 20-25 minutes or till golden.
Serve drizzled with honey.
Yield: 10-16 slices
