Apple and Cranberry Stuffed Pork Tenderloin with Apple Sauce and Maple Gravy

With my renovations FINALLY complete my husband and I never want to leave the house, so I thought I would create an easy yet delicous date night meal. If your date-nights-in are anything like mine it involves staying home, opening a bottle of good quality red wine, cooking dinner together, then snuggling by the fire to a movie. This recipe right here is an easy, yet delicous one for you and your hunny to make together. Serve with a side of roasted veggies and a salad. The bonus? This recipe isn't heavy which leaves lots of room in your tummy for dessert!

Ingredients:

Pork Roast + Gravy

  • 1 14-16 Oz. Pork Tenderloin, trimmed of excess fat

  • 1/4 cup + 3 Tbsp. Canadian Maple Syrup

  • 2 Cups unsweetened apple sauce

  • Roast Drippings

  • 1/2 Tsp. Cinnamon

  • Salt & Pepper to Taste

Stuffing

  • 1/2 Yellow Onion, Finely chopped

  • 2 cloves garlic, minced

  • 1/4 cup dried cranberries

  • 1/2 cup slivered almonds

  • 1 cup breadcrumbs

  • 1 green apple, grated

  • 1 Handful sage leaves, finely chopped

  • 1 Handful parsley, finely chopped

  • 1 Tsp. dried Thyme

  • 1 Tbsp. Olive oil

  • Salt & pepper to taste

Directions:

  1. Preheat oven to 425 Degrees

  2. Mix all stuffing ingredients together in large bowl and set aside.

  3. Lay tenderloin on clean surface, cut 2/3 of the way through center and open up. Season with salt and pepper. Arrange 2/3 of stuffing mixture along the center and secure with cooking twine every 2-3 inches. Wrap all remaining stuffing mixture in tin foil.

  4. Place stuffed tenderloin in roasting pan and brush with 1/4 cup maple syrup. Place foil wrapped stuffing next to tenderloin on pan.

  5. Roast for 45 minutes or till thermotor reaches 70-75 Degrees. Remove from oven and let sit for 10-15 minutes.

  6. Meanwhile make the gravy. Mix together remaining maple syrup, apple sauce, roast drippings and cinnamon and simmer on low. Season with salt and pepper.

  7. Carve pork in thick slices and serve with extra stuffing and topped with gravy.

Serves: 4-6 people (with sides)

Time: 1 hour and 30 minutes
