Guinness Shepard's Pie


Happy St. Patrick's Day everyone! In honour of this day I have for you a Classic Sheppard's Pie recipe but with a beer twist. This dish is on repeat in my home during the winter. Classic comfort food at its best, perfect for a chilly winter night or served alongside a pitcher of green beer. Enjoy!

Ingredients:

Filling

  • 1 Tbsp. Olive oil

  • 1 Yellow onion, diced

  • 3 Carrots, Diced

  • 3 Celery Sticks, Diced

  • 2 Cloves garlic, minced

  • 2 Lbs. extra lean ground beef

  • 1 Tsp. Worcestershire sauce

  • 3 Tbsp. tomato paste

  • 3 Tbsp. flour

  • 1 1/2 cups unsalted beef broth

  • 2/3 cup Guinness beer

  • Salt and Pepper to taste

Topping

  • 1-2 Lbs. White potatoes, peeled and cut in 1" cubes

  • 1/4 cup milk or cream

  • 1 Large egg yolk

  • 2 Tbsp. Unsalted Butter

  • Salt and Pepper to taste

Directions

  1. Bring a large pot of water to boil and add potatoes. Boil for 10-15 minutes or till a fork can be insert into potatoes.

  2. While the potatoes are boiling, heat oil in a large wok at medium heat. Add onion, carrots and celery and cook till tender, 5-6 minutes. Add garlic and cook for an additional 1 minute

  3. Add the ground beef, worcestirshire sauce and tomato paste. Mix all together while breaking up the meat. Cook for 5-6 minutes or till the meat is browned all over. Stir in the flour to coat the meat.

  4. Stir in broth and beer and allow to simmer for 5-10 minutes or till mixture has thickened and bubbles. Set aside.

  5. When potatoes are cooked drain water and place in a bowl of a electric stand mixer. Add in all other topping ingredients and mix together till fully combined and smooth. Set aside till meat mixture has thinckened.

  6. Preheat oven to 400 Degrees.

  7. Pour meat mixture into a ceramic baking dish and top evenly with potatoes.

  8. Bake for 20-25 minutes. Allow pie to sit for 5-10 minutes before serving.

Time: 45 Minutes
