Egg-White Breakfast Burrito's


This is our first light and healthy post of the season so we wanted to make it fun, because healthy eating shouldn't be boring! This breakfast burrito is fast, easy and filling! The perfect breakfast for rushed weekday mornings; cut and prepare all ingredients at night that way all you have to do is cook, eat and enjoy!

Ingredients:

  • 10 egg whites

  • Non-stick coconut oil cooking spray (I use the President's Choice Brand)

  • 4 Whole-Wheat tortillas

  • 4 Tbsp low fat Tex-Mex flavoured shredded cheese (I use the President's Choice Blue Menu Brand)

  • 4 Tbsp Salsa + Extra for serving

  • 1/2 Avocado sliced in 4 equal pieces

  • 1 cup black beans drained and rinsed

  • Salt and pepper, to taste

  • Cilantro for serving

Directions:

  1. Preheat boiler to 550.

  2. Heat small, non-stick frying pan at medium heat. Spray with coconut oil cooking spray and add egg whites. Cook till fluffy.

  3. Layout the 4 tortillas and fill with equal parts scrambled eggs, shredded cheese, salsa, avocado and black beans.

  4. Roll up and place in oven for 3-4 minutes so the cheese melts and the tortillas have some crunch.

  5. Serve topped with extra salsa and cilantro

Time: 15 minutes

Yield: 4 Burritos
