Day #12 of the 12 Days of Christmas Cookies - Oreo and Gingerbread Cheesecake Truffles
Merry Christmas Eve everyone! I decided on this particular recipe for our final cookie because it is super, super easy and can literally be made Christmas morning! I hope you
guys have a wonderful day surrounded with family and friends and filled with lot's of love and laughter!
Oreo Truffles
Ingredients:
24-30 oreo cookies
1 block cream cheese
2 cups semi-sweet chocolate chips or chocolate melts
1/2 cup crushed candy-canes
Directions:
Place oreos in food processor and pulse till completely crushed and cookies are a sand-like texture
Mix in the block of cream cheese and pulse till fully combined
Line cookie sheets with parchment and form oreo mixture into 1" balls and place in freezer for 10-20 minutes to harden
Once the balls have hardened melt the chocolate in microwave in 30 second intervals making sure not to over heat.
Roll balls in chocolate and sprinkle crushed candy-canes on top before the chocolate hardens.
Place in freezer again for 30-45 minutes for the chocolate to fully harden.
Yield: 25-30 Truffles
Time: 1 hour
Gingerbread Truffles
Ingredients:
24-30 gingerbread cookies
1 block cream cheese
2 cups white chocolate chips or white chocolate melts
1/2 cup crushed gingerbread cookies
Directions:
Place gingerbread in food processor and pulse till completely crushed and cookies are a sand-like texture
Mix in the block of cream cheese and pulse till fully combined
Line cookie sheets with parchment and form gingerbread mixture into 1" balls and place in freezer for 10-20 minutes to harden
