Part #1 of our Holiday Pizza's - Roasted Cranberry Pizza with Honeyed Goat Cheese, Proscuitto an

I may or may not be known for my pizzas (by my husband and girlfriends that is!) so I obviously had to make some Christmas inspired ones! First up we have a pizza that
has all the colours and flavours of the season; red cranberries, white goat cheese, golden honey and green arugula. I like to make my pizzas on the BBQ typically but in the Canadian winter that's not so fun so these are made in the oven. As always they pair perfectly with red wine!
First we are going to make the roasted cranberries
Ingredients:
2 cups cranberries
2 tbsp olive oil
1 tbsp sugar
salt and pepper to taste
Directions:
Heat oven to 350
Coat cranberries in large bowl with oil, sugar, salt and pepper.
Roast on parchment for 15-20 minutes or till they start breaking down
Set aside till we dress the pizza

While they are roasting we are going to make the honeyed goat cheese
Ingredients:
1 cup softened goat cheese (I leave it on the counter for a few minutes before using)
2 tbsp honey
Fresh thyme leaves
Directions:
In small bowl mix goat cheese with honey and thyme leaves
Set aside till we dress the pizza
Now we are going to make the Pizzas
Ingredients:
1 half of store bought pizza dough
handful cornmeal
3 tbsp olive oil (may need more it's up to you!)

1 tsp dried basil
salt and pepper to taste
1 serving roasted cranberries
1 serving honeyed goat cheese
6 slices proscuitto
Handful arugula dressed with olive oil
Balsamic reduction
Directions:
Preheat oven to 450
Roll out pizza dough on floured surface into 12" diameter round pizza.
Lightly dust cornmeal on top face of dough, flip it over and place on pizza stone or breathable pizza pan
Brush on olive oil and basil, season with salt and pepper.
Place in oven and cook till lightly browned. Pull out of oven and top with goat cheese, cranberries and proscuitto.
Place back in oven for 3-5 minutes to warm toppings
Top with dressed arugula and drizzle on balsamic reduction
Cut into slices and Enjoy!
Time: 45 minutes (to make toppings and assemble the pizza)
Yield: 1 pizza, usuailly 6 slices
