Day #6 of the 12 Days of Christmas Cookies - Cranberry Thumbprint Cookies
This recipe has got to be the easiest and probably one of the most prettiest Christmas Cookies of the bunch. This is the type of cookie that can be made an hour before company arrives. You could even make them Christmas morning for you last minute folks! Whenever you make them they are a pretty addition to your cookie plate, Enjoy!
Ingredients:
1 cup butter, room temperature
2/3 cup white sugar
1/2 Tsp. almond extract
2 cups all-purpose flour
1/4 Tsp. salt
1/2 cup cranberry jam, or whatever jam you prefer
1/2 cup white chocolate chips
Directions:
Pre-heat oven to 350 degrees
In the bowl of a stand mixer cream together butter and sugar, once creamed mix in almond extract.
In a separate bowl mix together flour and salt. Slowly mix wet into dry and mix till well combined.
Shape dough into 1" balls. lay on cookie sheet a few inches apart and press down into center with thumb or forefinger
Fill each cookie with jam and place sheet in freezer for 10-15 minutes to set the jam.
Bake for 10-15 minutes or till the edges turn light brown.
While cookies are baking melt the chocolate.
Cool cookies completely and drizzle with melted chocolate in a criss-cross motion
Yield: 35-40 cookies
