Day #8 of the 12 Days of Christmas Cookies - Double Chocolate Biscotti


Biscotti cookies remind me of my Nonna, she would always have a fresh batch in her kitchen, just waiting to be enjoyed by friends. As a kid I remember dropping by her house, unexpected, and was welcomed with warm cookies and a glass of milk. I would sit around her kitchen table with my Nonno and talk while dunking my cookies in cold milk. These biscotti are a nod to that memory; they are the perfect cookies to enjoy with a large glass of milk, Enjoy!

Ingredients:

  • 6 Tbsp. butter (about 3/4 of a stick) room temperature

  • 1/2 cup sugar

  • 2 large eggs

  • 1/4 Tsp. vanilla extract

  • 2 cups flour

  • 1/2 cup cocoa powder

  • 1 Tsp. baking soda

  • 1 Tsp. salt

  • 1 cup chocolate chips

Directions:

  1. Pre-heat oven to 350 Degrees

  2. Cream butter and sugar together in a bowl of a mixer. Add in eggs one at a time mixing well between. Mix in vanilla.

  3. In a large bowl sift flour, cocoa, baking soda and salt. Slowly add dry ingredients to wet mixing till dough forms.

  4. Shape dough in a log, roughly 14"x3" and place on a cookie sheet covered in parchment. Bake for 30 minutes.

  5. Remove from oven allowing to rest for 3-5 minutes. Cut loaf into 1/2" thick slices and place back on cookie sheet.

  6. Bake cut cookies for another 5 minutes, turn and bake for another 5. Remove from oven and allow cookies to cool on cooling rack.

  7. While cookies are cooking melt chocolate chips. Drizzle melted chocolate over cooled biscotti in a crisscross motion.

Yield: 18-20 cookies

Time: 1 hour
