Herb Roasted Chicken
You guys know Sunday supper is my favourite meal of the week. It's the night of the week I find most relaxing and calming. I love sitting down to a yummy dinner and good conversation. I like to take my time with Sunday supper which usually means making a meal that takes double the time weekday dinners take, but not this one! This Roast Chicken literally takes, at the most, 45 minutes of hands on time. This is the perfect Sunday supper for busier days, Enjoy!
Ingredients:
1 full chicken with skin, cleaned
3-4 tbsp. olive oil
Salt & pepper
1/2 yellow onion, sliced
1/2 lemon, sliced
Handful fresh sage leaves
Handful fresh rosemary stems
Handful fresh thyme stems
Directions:
Set oven to 425 Degrees
Drizzle olive oil all over chicken including inside the cavity and season with salt & pepper. Stuff cavity with onion, lemon and half the fresh herbs. Top chicken with remaining herbs.
Roast in oven for about 1 hour and 30 minutes or till the internal temperature reaches 175. Make sure to baste the bird every 20-30 minutes.
Carve into pieces, discard onions & lemon, and serve with drippings as a gravy (if too runny add 1 tbsp. cornstarch to thicken)
