Holiday Pulled Pork Tacos with Roasted Cranberry Salsa


I love tacos just as much as the next person. They are the perfect, easy dinner that leaves everyone satisfied. Here in Canada for some reason tacos are enjoyed mainly in the Summer, not this one. Introducing my holiday pulled pork taco. Simmered in the Slow Cooker in holiday spices and accompanied by tart roasted cranberries, Enjoy!

Ingredients:

  • 1 Tsp. cayenne pepper

  • 1 Tsp. chili powder

  • 1 Tbsp. All spice

  • 1 Tsp. Cumin

  • 1 Tsp. Cinnamon

  • 2 Tbsp. brown sugar

  • 1 Tbsp. ginger

  • 1 6-8 Pound pork shoulder

  • Salt and pepper to taste

  • 2 Tbsp olive oil

  • 2 cups fresh cranberries

  • Small tortillas, lime wedges, feta, cilantro for serving

Directions:

  1. Mix all spices and sugar together in small bowl

  2. Season pork with salt and pepper and rub spice mixture all over. Wrap in plastic wrap and put in fridge for 2 hours

  3. Discard plastic wrap, fill slow cooker with 1/4 cup water and place pork inside. Set low and cook for 8-10 hours.

  4. Once done remove pork, discard liquids, transfer to cutting board and shred.

  5. Preheat oven to 400. Toss berries in olive oil and bake for 10-15 minutes on parchment.

  6. Serve shredded pork on tortilla shells topped with cranberry salsa, feta, lime wedges and cilantro.

Time: 45 minutes (hands on)

Serves: 4 people
