Mexican Fritatta


Here is another perfect Sunday Breakfast recipe. Simple ingredients like potatoes, eggs, green onions, tomatoes and cheese come together to make a perfect, simple and easy breakfast. It's also savory enough to be served as a light lunch alongside a mixed salad. Enjoy!

Ingredients:

  • 2 tbsp olive oil

  • 1 red potato thinly sliced

  • 2 green onions, thinly sliced

  • 10 large eggs

  • 1/2 cup milk

  • 3-4 roma tomatoes, chopped

  • 1/2 cup shredded tex mex mixed cheese

  • Handful cilantro

Directions:

  1. Set boiler on oven

  2. Heat olive oil in a 12" oven safe skillet. Add potatoes and cook flipping occasionally till browned on both sides, about 8-10 minutes. Mix in half the green onions and cook for 2 minutes

  3. In a large bowl mix together eggs, milk, half the

tomatoes and cheese mixture. Season with salt and pepper

  1. Pour egg mixture in the skillet and cook, lifting edges every few minutes to allow uncooked egg to flow underneath. Cook for about 8-10 minutes.

  2. Top egg mixture with remaining cheese and put in oven for about 2-3 minutes or till cheese is bubbling on top.

  3. While egg mixture is in the oven mix together remaining tomatoes, green onions and cilantro.

  4. Serve topped with tomato salsa and salt and pepper to taste.

Time: 30 minutes
