Day #4 of the 12 Days of Christmas Cookies - Ginger Snaps
I remember making Ginger Snap cookies since I was a kid. My favourite part would be rolling the dough balls in sugar. My hands would get covered in sugar and I would have no choice but to lick it all off! I love how one simple cookie recipe can bring back so many Christmas memories. This was the reason why I created the 12 days of Christmas cookies, to relive all my childhood baking memories. I hope you take some time this holiday season to do the same, gets your hands dirty in the kitchen and reminisce on all your own holiday traditions. Enjoy!
Ingredients:
1/2 cup (1 stick) butter
1/2 cup brown sugar
1/3 cup dark molasses
1 large egg
2 cups all-purpose flour
2 Tsp. baking soda
1 1/2 Tsp. ground ginger
1 Tsp. ground cinnamon
1/2 Tsp. ground cloves
1/4 Tsp. salt
1/4 cup sugar
Directions:
Preheat oven to 350 Degrees. Grease 2 baking sheets.
In medium bowl mix together butter, sugar and molasses. Add the egg and mix till well combined.
In large bowl mix flour, baking soda, spices and salt.
Combine wet and dry ingredients together and mix till dough ball forms
Using a small cookie scoop, scoop out cookie dough into small balls. Roll in sugar and place on cookie sheet. DO NOT FLATTEN.
Bake for 8-10 minutes or till they flatten on their own and the tops crack.
Time: 45 minutes
Yield: 20-24 cookies
