Day #4 of the 12 Days of Christmas Cookies - Ginger Snaps

I remember making Ginger Snap cookies since I was a kid. My favourite part would be rolling the dough balls in sugar. My hands would get covered in sugar and I would have no choice but to lick it all off! I love how one simple cookie recipe can bring back so many Christmas memories. This was the reason why I created the 12 days of Christmas cookies, to relive all my childhood baking memories. I hope you take some time this holiday season to do the same, gets your hands dirty in the kitchen and reminisce on all your own holiday traditions. Enjoy!
Ingredients:
- 1/2 cup (1 stick) butter 
- 1/2 cup brown sugar 
- 1/3 cup dark molasses 
- 1 large egg 
- 2 cups all-purpose flour 
- 2 Tsp. baking soda 
- 1 1/2 Tsp. ground ginger 
- 1 Tsp. ground cinnamon 
- 1/2 Tsp. ground cloves 
- 1/4 Tsp. salt 
- 1/4 cup sugar 
Directions:

- Preheat oven to 350 Degrees. Grease 2 baking sheets. 
- In medium bowl mix together butter, sugar and molasses. Add the egg and mix till well combined. 
- In large bowl mix flour, baking soda, spices and salt. 
- Combine wet and dry ingredients together and mix till dough ball forms 
- Using a small cookie scoop, scoop out cookie dough into small balls. Roll in sugar and place on cookie sheet. DO NOT FLATTEN. 
- Bake for 8-10 minutes or till they flatten on their own and the tops crack. 
Time: 45 minutes
Yield: 20-24 cookies
