Berry Quinoa Salad with Herbs and Feta
Every Sunday morning I whip up a large salad; either quinoa, beans, or grains. I then eat it for my lunches throughout the week; it makes my weeknights easier for no-thought lunches. This is one of my favourites. Loaded with flavour, both sweet and salty, it's the perfect mix. And it keeps covered in the fridge for a few days. Enjoy!
Ingredients:
Salad
2 cups quinoa, cooked
1 cup strawberries, sliced
1 cup blackberries
1 cup blueberries
1 cup roasted, sliced almonds
1/2 cup-1 cup feta
Handful chopped mint
Handful chopped basil
Dressing
1/2 orange juiced, about 3-4 tbsp.
1 tbsp lemon juice
2 tbsp honey
Salt and pepper to taste
Directions:
Mix Quinoa, berries, almonds feta and herbs in a large bowl till combined
In small bowl mix orange juice, lemon juice, honey together
Dress salad and season with salt and pepper
Serves 4-5
Time 45 minutes (including cooking time for quinoa)
