Bocconcini Stuffed Turkey Meatballs
Sunday Supper's are my favourite, both to cook and eat. The saying "Sunday Supper" just brings me all kinds of happiness. I prepare this supper with all heat and soul. Usually my husband Steve and I choose Sunday as our pig out day, I make an indulgent meal, a meal that leaves you satisfied and FULL. We sit down together, usually with candles and fresh baked bread, and eat. We talk, we laugh and we drink red wine. We end our favourite day together with full bellies. Ingredients:
1 pound ground turkey meat
1 tsp. chili flakes
1 tsp. oregano
1 tsp. basil
1 tsp. thyme
1 tsp. garlic, minced
1/2 cup Italian bread crumbs
Salt and pepper to taste
12 pearl bocconcini
2 tbsp. olive oil
1 jar tomato sauce
Finely grated Parmesan Cheese for serving
Fresh basil leaves for serving
Directions:
Mix turkey, spices, garlic and breadcrumbs in a large bowl till well combined.
Roll mixture into 24 small size balls and lay onto baking sheet. Insert bocconcini pearls into half of the meatballs. Roll together one plain meatball and one bocconcini meatball to form one large meatball.
In a medium non-stick skillet heat the olive oil at medium heat and add meatballs. Cook turning meatballs onto all sides till browned all around. Remove from skillet.
Add the tomato sauce and heat for 3-5 minutes. Add the meatballs and cook for another 3-5 minutes, season with salt and pepper. Serve with freshly grated parmesan cheese, basil leaves and fresh crusty bread.
