Winter Wheatberry Salad

Dare I say that word, Winter, yupp friends it is coming. This weekend I started putting some Christmas decorations up and may or may not have watched the Grinch and Elf this Sunday afternoon, don't judge I'm a Christmas girl. This being said I thought I would share with you one of my go-to winter salad recipes with you. Pomegranates, Walnuts, Pistachios, and Dried Cranberries make up this delicious wheatberry salad, Enjoy!
Ingredients:
2 cups wheatberries
1/2 cup walnuts, chopped
1/2 cup shelled pistachios, chopped
3 stalks celery, finely chopped
1 cup dried cranberries
1 cup pomegranate seeds
3 green onions, sliced

1 red pepper, chopped
1 yellow pepper, chopped
1/2 cup parsley, chopped
1/4 cup olive oil
1/4 cup lemon juice
salt and pepper to taste
Directions:
In large pot combine wheatberries and boiling water. Cook uncovered till tender, 45 minutes-1hour
In the meantime chop veggies and prepare dressing
Drain wheatberries and mix with veggies and dressing, season with salt and pepper
Time: 1 hour
Serves: 6
