Coconut & Pomegranate Chia Seed Pudding
As momma used to say, breakfast is the most important meal of the day! It is the meal that gets your body going, fueling it for a day of adventure. If you are like me, most weekday mornings are packed with meal prep for the evening's dinner, laundry catch up, last minute errands and lots of coffee. This chia see pudding recipe is my go-to for weeks that I know will have very busy mornings. It takes less than 5 minutes to make and fills you right up, Enjoy!
Ingredients:
1/3 cup chia seeds
1 1/2 cups coconut milk
2 Tbsp. coconut sugar
1/4 Tsp. vanilla extract
1/4 cup shredded coconut + more for serving
1 cup pomegranate seeds for serving
Directions:
Mix chia seeds, coconut milk, sugar, vanilla and shredded coconut together in a medium bowl.
Cover and refrigerate overnight.
Spoon half the pudding into a serving bowl. Top with half the pomegranate seeds and additional shredded coconut.
Serves: 2
