Sunday's Pumpkin Pancakes

After the last chocolate bar was given out on Halloween night, I went to blow out the candles in my jack-o-lanterns thinking "what shall I make for breakfast" and it hit me, Pumpkin Pancakes. I try to make something special every week for Sunday breakfast. It's the one breakfast meal where my husband and I sit together as a family. We sip good coffee and have even better conversation. So here it is, just in time for Sunday, my recipe for Pumpkin Pancakes, Enjoy!
Ingredients:
- 3 eggs 
- 1/2 cup unsweetened apple sauce 
- 1/2 cup pumpkin puree (not pumpkin pie filling!) 
- 1 1/2 cups coconut milk 
- 2 tsp vanilla extract 
- 1 cup whole wheat flour 
- 1 cup oats 

- 2 Tbsp. baking powder 
- 1 Tsp. pumpkin pie spice 
- 1 Tsp. cinnamon 
- coconut oil 
- handful pecans for serving 
- butter and/or Canadian maple syrup for serving 
Directions:
- In large bowl mix together eggs, apple sauce, pumpkin and milk till smooth. Add vanilla, flour, oats, baking powder, and spices. Mix until fully combined. 
- Heat 1 tsp coconut oil in a large pan at medium heat. Once hot add 2/3 ladle of batter into pan. Cook till tops start to bubble and edges brown, 2-3 minutes. Flip and cook for another 1-2 minutes. Repeat with the rest of the batter. 
- Serve topped with pecans, butter and/or maple syrup.
