Sage & Proscuitto Wrapped Pork Tenderloin with Applesauce Gravey and Cider Caramelized Onion &am

These flavours scream fall; Sage, Apples, Onions, and Cider. This fall I have been using Apple Cider in everything, from Pizza to Lamb and even cocktails. One of my fondest fall

memories would be going to the farm to pick apples, my mom would buy my sister and I mini caramelized pumpkin donoughts and cinnamon apple cider, It was perfect. This is my savory ode to this fall memory, Enjoy!

First we're going to make the Pork

Ingredients

  • 1 1/2 pound pork tenderloin

  • Handful sage leaves, about 15-20

  • 8-10 slices proscuitto

  • 1 Tbsp. Olive Oil

  • Salt & pepper to taste

  • Kitchen Twine

Directions

  1. Preheat oven to 350

  2. Drizzle oil over tenderloin and season with salt & pepper. Place and press sage leaves into tenderloin then wrap with proscuitto. If the proscuitto does not stick then wrap the tenderloin with kitchen twine.

  3. Roast for 25-30 minutes or till the internal temperature reaches 160-170.

  4. Slice into small medallions and serve with Apple Sauce Gravy

Second we're going to make the Applesauce Gravy

Ingredients:

  • 1 Tbsp. olive oil

  • 1 small onion, chopped

  • 1 cup apple cider

  • i cup apple sauce

  • 1/2 tsp all spice

  • 1/2 tsp. flour to thicken (only if necessairy)

  • salt and pepper to taste

Directions:

  1. Heat oil on medium heat and cook onion till fregrant 2-3 minutes

  2. Add cider, applesauce and allspice and cook stirring often 10-15 minutes

  3. Season with Salt and Pepper to taste. Mix in flour to thicken only if necessary

Third we're going to make the Cider Caramelized Onion & Apple Mash

Ingredients

  • 3 Tbsp. Butter

  • 1/2 yellow onion, sliced

  • 1/2 apple, cut in thin slices (1/4" in thickness)

  • 1 Tbsp. brown sugar

  • 1/2 cup apple cider

  • 1/2 tsp dried thyme

  • 4 large white potatoes, peeled & cut in 1/2" thick cubes

  • 1/4 cup milk

  • Salt and Pepper to taste

Directions

  1. Melt 1 Tbsp. butter on medium heat. Add onion, apple, brown sugar, cider and thyme. Cook till caramelized to your liking. Remove from heat and let cool.

  2. Add potato cubes to boiling pot of water. Cook till they are softened throughout, 10-15 minutes

  3. Drain water. Add butter and milk and mash potatoes till desired consisty. Mix in onion & apple mixture, season with salt and pepper and garnish with fresh thyme leaves.

Serves 4
