Pumpkin Bread with Spice Glaze

Whats better then a cup of coffee and good conversation with a loved one? nothing right. Growing up I used to sit around my Janny's antique kitchen table, sip on a hot coffee (or hot chocolate when I was really little) and we would just talk. At some point in the conversation she would pull something delicious out of her oven, always fresh and always home made. I vowed to myself that I would do this for my loved ones when I grew up, so I wrote this recipe with her in mind. Enjoy with a piping hot cup of coffee, latte or apple cider.

First we're going to make the Pumpkin Bread

Ingredients:

  • 3/4 cup coconut sugar

  • 1 cup + 1½ Tbsp whole wheat flour

  • 3/4 tsp baking soda

  • 1/2 tsp baking powder

  • 1/2 teaspoon salt

  • 1 tsp cinnamon

  • 1 tsp pumpkin spice

  • 1 large egg

  • 3/4 cup pumpkin puree

  • 1/3 cup liquid coconut oil

  • 1/3 cup warm water

Instructions:

  1. Preheat oven to 350 F (175 C)

  2. In a large bowl combine all dry ingredients; coconut sugar, whole wheat flour, baking soda, baking powder, salt and spices.

  3. In another bowl combine all wet ingredients; egg, pumpkin puree, coconut oil and water.

  4. Add wet ingredients to dry ingredients and mix until combined.

  5. Grease one 9×4 loaf pan and pour batter in.

  6. Bake for 45-50 minutes, or until a toothpick inserted in the middle comes out clean. Let cool completly.

While the loaf is cooling we're going to make the Spice Glaze

Ingredients:

  • 2 cups spowdered sugar

  • 1 Tbsp. butter room temperature

  • 1/2 tsp. cinnemon

  • 1/2 tsp. pumpkin pie spice

  • 3 tbsp. milk (adding more if necessairy)

Instructions:

  1. In medium bowl mix powdered sugar, butter, cinnemon, and pumpkin pie spice.

  2. Gradually add milk until desired consistency adding additional tablespoons if necessairy
